From there, they are crushed, de-stemmed and then gently pressed in our Bucher pneumatic press. Cold extraction for 2 days follows and alcoholic fermentation takes place in stainless steel tanks, for 16-18 days, by inoculating with Saccharomyces Cerevisiae, at controlled temperatures of 15-16\u00b0C. Sur lies treatment for 12 weeks.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p><strong>Alcohol: <\/strong>13.2 %vol<\/p>\r\n<p><strong>pH: <\/strong>3.38<\/p>\r\n<p><strong>Total acidity: <\/strong>5.46 g\/lt<\/p>\r\n<p><strong>Residual sugar: <\/strong>0.0 g\/lt<\/p>\r\n<p>&nbsp;<\/p>\r\n<p><strong>Ageing Potential:<\/strong><strong>\u00a0<\/strong>2-3 years<strong><br \/>\r\nTasting Notes:\u00a0<\/strong>Pale yellow color with greenish highlights. Intense floral profile on the nose, dominated by rose and white flowers, such as jasmine. Delicate on the mouth, with balanced acidity, framed by a floral and spicy character (ginger). Pleasant aftertaste with hints of pineapple.<\/p>\r\n<p><strong>Food Pairing:<\/strong><strong>\u00a0<\/strong>Serve as an aperitif or enjoy with Asian cuisine and cold, seafood and shellfish dishes. Enjoy it with seasonal fruits too.
