Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 8-10 days. Alcoholic fermentation is completed in stainless steel tanks, by inoculating with Saccharomyces Cerevisiae, at a controlled temperature of 20-22<sup>o<\/sup>C and lasts for approximately 15 days.<strong><br \/>\r\nCellaring: <\/strong>3-4 months in 2<sup>nd<\/sup> use, French oak barrels.<\/p>\r\n<p><strong>Alcohol: <\/strong>12.5 %vol<br \/>\r\n<strong>pH: <\/strong>3.53<br \/>\r\n<strong>Total acidity: <\/strong>4.38 g\/lt<br \/>\r\n<strong>Residual sugar<\/strong>: 0.28 g\/lt<\/p>\r\n<p>&nbsp;<\/p>\r\n<p><strong>Ageing potential:<\/strong>\u00a02-3years<br \/>\r\n<strong>Tasting Notes:<\/strong>\u00a0Bright ruby \u200b\u200bcolor and a pleasant aromatic profile, with a strong character of red fruits (plum, sour cherry), framed by notes of spices. On the palate, it appears elegant and balanced, with rounded tannins and a pleasant, fruity aftertaste<br \/>\r\n<strong>Food Pairing:<\/strong>\u00a0Makes a perfect match for Mediterranean cuisine with mild red sauces, mild red meats, yellow cheese and seasonal fruits.
