Pendeli<br \/>\r\n<strong>Origin:<\/strong>\u00a0Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres<br \/>\r\n<strong>Soil:<\/strong>\u00a0Sand and clay, gently sloping<br \/>\r\n<strong>Grape Variety:<\/strong>\u00a0Chardonnay<br \/>\r\n<strong>Microclimate:<\/strong>\u00a0Sufficient winter rainfall, regular snowfalls and cool, dry summers<br \/>\r\n<strong>Harvest:<\/strong>\u00a0Second half of August<br \/>\r\n<strong>Vinification:<\/strong>\u00a0Grapes are picked by hand in small crates which are then placed in cold storage overnight, at 6\u03bfC. Grapes are then de-stemmed and gently pressed in a pneumatic press, followed by static debourbage. Alcoholic fermentation in French oak barrels, at a controlled temperature of 16-18 \u03bfC for approximately 18 days. Sur lie and batonnage treatment for 7 months in French oak barrels.<br \/>\r\n<strong>Ageing Potential:<\/strong>\u00a03-5 years<br \/>\r\n<strong>Tasting Notes:<\/strong>\u00a0Appealing light silver-yellow colour, with straw undertones. Fruity aroma, reminiscent of mango, pineapple and peach, with aromatic hints of nuts. Rich flavor with a clear fruity character, ideally expressed in an elegant buttery background with discreet presence of the barrel. Generous and well-balanced in the mouth, with refreshing acidity and fruity aftertaste.<br \/>\r\n<strong>Food Pairing:<\/strong>\u00a0Enjoy with grilled white fish, poultry served with a light sauce and also with exotic salads, pasta with cream, mushroom risotto, vegetable dishes and p\u00e2t\u00e9.
