The must is transferred to stainless steel tanks, where alcoholic fermentation is completed at low temperatures. The traditional method includes a second fermentation in the bottle, followed by a maturing period on the fine lees for at least 9 months.<\/p>\r\n<p><strong>TASTING NOTES<\/strong><br \/>\r\nAn elegant sparkling wine with a light yellow-green color and fine, persistent bubbles.
