In the 17th century, the monk Dom Pierre P\u00e9rignon nurtured an ambition to create \u201cthe best wine in the world\u201d. <\/strong><\/p>\r\n

Three\u00a0 centuries\u00a0 later,\u00a0 Dom\u00a0 P\u00e9rignon\u00a0 perpetuates\u00a0 this\u00a0 exceptional\u00a0 artisan\u2019s\u00a0 vision\u00a0 and work.<\/p>\r\n

\u00a0Dom P\u00e9rignon vintages are produced using the best grapes on the estate. Each one is a unique creation with a style and an identity which are unique to its vintage: it is down to the Chef de Cave to decide if the vintage will be declared. \u201cIf the fruit we have harvested doesn\u2019t satisfy the Dom P\u00e9rignon Champagne criteria, there will not be a vintage that year.\u201d explains Richard Geoffroy.<\/p>\r\n

This vision is tangible through the subtle balance that characterizes the House Cham- pagnes \u2013 an alliance of ripeness, vibrancy, lightness and intensity \u2013 giving the wine the potential to age with suppleness and elegance.<\/p>\r\n

P2: The ultimate Dom P\u00e9rignon <\/strong><\/p>\r\n

The uniqueness of Dom P\u00e9rignon vintages lies in the way they evolve – not steadily in a linear way but through successive windows of expression. These privileged points in time are called \u201cPl\u00e9nitudes\u201d – captured moments when the wine sings higher and stronger.
\r\n
\r\n P2 is the Second Pl\u00e9nitude of Dom P\u00e9rignon, the result of 16 years of elaboration. The energy reaches its climax. The dark, mineral, iodine, spicy singularity of Dom P\u00e9rignon resounds higher and clearer than ever. Meet the ultimate Dom P\u00e9rignon.<\/p>\r\n

P2 1998<\/strong><\/p>\r\n

The wine-growing season was marked by extremes, with few grapes, burnt by the sun, in a spectacularly hot August and especially gray, rainy weather during the first two weeks of September. Postponing the harvest allowed us to take advantage of the miraculous spell of good weather that followed. That decision defined the creation of the vintage. When the harvest began on September 21, the grapes were perfectly ripe and healthy.<\/p>\r\n

After a short breathing period, the wine has an intense, full and radiant bouquet, with no- tes of honeysuckle, orange colored fruits, toasted almonds and hints of iodine sensations.<\/p>\r\n

The creamy chewiness characterizing the vintage is channeled in a direction that is edgy yet embracing, with a wave of aromatic persistence.
