Vinification: Grapes are handpicked and transported in small crates, put in cold storage overnight, at 6 οC. From there, they are de-stemmed, followed by cold extraction using dry ice, crushed and then gently pressed in our Bucher pneumatic press. Static debourbage follows and alcoholic fermentation takes place in stainless steel tanks, for approximately 15 days, at controlled temperatures of 15-16°C. Sur lies treatment, with bâtonnage for 4 months.

Tasting Notes: 
Pale yellow colour with greenish highlights. High-intensity aromas with a floral character, framed by aromas of white peache. Pleasant mouth feel, perfectly balanced, with mild botanical characteristics and refreshing aftertaste.
Food Pairing: Serve as an aperitif. Pair with colorful salads, seasonal fruits, Asian cuisine, shellfish and ceviche. Serve at 10-12°C.
