WINEMAKING
Grapes are harvested early for the production of the base wine. The traditional method is used, with a second fermentation in the bottle and maturation on the fine lees for at least 9 months.

TASTING NOTES
An elegant sparkling wine with a soft pink color and copper highlights. It features a cordon of fine bubbles with intensity and long duration.
The nose presents distinguished notes of cherry, complemented by a discreet presence of yeast aromas.

FOOD PAIRING
Pairs well with salad with shrimp, seafood pasta (e.g., lobster pasta) and scrambled eggs cooked with tomatoes and sometimes with feta cheese and herbs (‘strapatsada’).
