Origin: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 metres
Grape Varieties: Merlot 70% – Cabernet Sauvignon 30%
Harvest:
Early August for the Merlot and late August for the Cabernet Sauvignon.
Vinification:
Grapes are picked by hand in small crates which are then placed in cold storage overnight, at 6οC, and then they are de-stemmed. For Merlot grapes, cold-extraction is applied using dry ice in our Bucher pneumatic press, while for Cabernet Sauvignon, the saignée method is applied. Alcoholic fermentation takes place in stainless steel tanks, at a controlled temperature of 14-16οC for approximately 14-16 days. Sur lies treatment for 3 months.

Tasting Notes:
 Delicate wine with a soft salmon color. Elegant aromatic profile, dominated by aromas of wild strawberry, exotic fruits and pink grapefruit. Refreshing on the palate, with a pleasant and spicy aftertaste.
Food Pairing: Ideal for Greek Mediterranean cuisine and pasta with light red sauces. We suggest pairing it with salmon, either grilled or with pasta. Serve as an aperitif. Serve at 10οC.
