Vinification / Ageing: Grapes are harvested by hand in February. The whole bunches are crushed, and the resulting must is subjected to natural cold fining. Fermentation takes place in tanks, at low temperatures. Barrel ageing lasts for 6 months, followed by fining, filtering, and bottling.
