WINEMAKING
To produce the base wine, grapes are harvested early, pressed whole-cluster under low pressure, and fermented at low temperatures. Following this, the base wine is bottled for the traditional method, and a secondary fermentation occurs in the bottle under controlled conditions. The wine matures on its lees for nearly two years, and the final stage includes riddling and the addition of Liqueur d’Expedition.
TASTING NOTES
An elegant and complex sparkling wine with a light yellow-green color and fine, persistent bubbles. The nose features distinct aromas of citrus peel, pear, and lilac, with a touch of yeast and honey in the background.
FOOD PAIRING
Pairs well with shellfish, caviar, fish roe, and ripe cheese.
