Harvest: First 10 days of September
Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight. Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 15 days. Alcoholic fermentation is completed in stainless steel tanks, at a controlled temperature of 20-24oC and lasts for approximately 18 days.
Cellaring: Six months in 2nd use French oak barrels

Tasting Notes: Intense deep red colour with purple highlights. Dense and botanical nose with a characteristic aroma of black fruits, such as plum and notes of licorice. Well balanced in the mouth, well-structured with red fruit aromas and supple tannins. Pleasant acidity and long aftertaste.
Food Pairing: Makes a perfect match for simple, every day dishes, red meat, stews, strong cheese and charcuterie and barbeque. Serve at 15-16οC.
