Vineyard: From our own vineyard in the hilly region of Marmarias, at an altitude of 750m.
SOIL TYPE
Clay-rocky soil with excellent drainage and a NW orientation.
WINEMAKING
Classic Burgundian method. The first stage of fermentation takes place in stainless steel tanks, after which the must is transferred to barrels to complete fermentation. The wine remains in the barrels to age on its fine lees for 4-5 months.
TASTING NOTES
A rich wine with a complex palette. Toasty oak aromas mingle with varietal notes of apricot, peach, nectarine, and pineapple. Can be cellared for 3 to 5 years.
FOOD PAIRING
Pairs well with fatty, oily fish such as smoky grouper with grilled vegetables, salmon ceviche, and lobster.
