Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight, at 6οC. From there, they are crushed, de-stemmed and then gently pressed in our Bucher pneumatic press. Cold extraction for 2 days follows and alcoholic fermentation takes place in stainless steel tanks, for 16-18 days, by inoculating with Saccharomyces Cerevisiae, at controlled temperatures of 15-16°C. Sur lies treatment for 12 weeks.

Tasting Notes: Pale yellow color with greenish highlights. Intense floral profile on the nose, dominated by rose and white flowers, such as jasmine. Delicate on the mouth, with balanced acidity, framed by a floral and spicy character (ginger). Pleasant aftertaste with hints of pineapple.
Food Pairing: Serve as an aperitif or enjoy with Asian cuisine and cold, seafood and shellfish dishes. Enjoy it with seasonal fruits too. Serve at 11-13οC.
