Vinification: Grapes are picked by hand in small crates which are then placed in cold storage overnight. Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 8-10 days. Alcoholic fermentation is completed in stainless steel tanks, by inoculating with Saccharomyces Cerevisiae, at a controlled temperature of 20-22oC and lasts for approximately 15 days.
Cellaring: 3-4 months in 2nd use, French oak barrels.

Tasting Notes: Bright ruby color and a pleasant aromatic profile, with a strong character of red fruits (plum, sour cherry), framed by notes of spices. On the palate, it appears elegant and balanced, with rounded tannins and a pleasant, fruity aftertaste
Food Pairing: Makes a perfect match for Mediterranean cuisine with mild red sauces, mild red meats, yellow cheese and seasonal fruits. Serve at 14οC.
