Vinification: Grapes are handpicked and transported in small crates, put in cold storage overnight, at 6οC. From there, they are de-stemmed, crushed and then gently pressed in our Bucher pneumatic press. Static debourbage follows and alcoholic fermentation takes place in stainless steel tanks, for approximately 18 days, at controlled temperatures of 12-14°C. Sur lies ageing treatment for 2 months.

Tasting Notes: Pale lemon colour with greenish highlights. Typical Chardonnay, with a strong aromatic profile and a fruity character (stone fruits). Notes of botanical hints and white flowers in the background (chamomile, jasmine). Elegant, with perfectly balanced acidity and a pleasant, fruity aftertaste.
Food pairing: Ideal for pasta with vegetables and white sauces, white fish and meat, and soft cheese. Serve at 10-12οC.
