Vineyards: Kokotos Estate vineyards in Stamata, Attiki at an altitude of 450 m

Cabernet Sauvignon 85% – Merlot 15%
Harvest:
First 15 days of September
Vinification:
Grapes are picked by hand in small crates which are then placed in cold storage overnight, at 6oC. Grapes are then de-stemmed and put in the vinificator. Extraction lasts for approximately 20 days. Cold extraction is carried out the first 3 days and the alcoholic fermentation is completed in stainless steel tanks by inoculating with Saccharomyces Cerevisiae , in approximately 18 days, at a controlled temperature of 20-24οC.
Cellaring:
24 months in French oak barrels. The wine is then bottled without any further treatment (unfiltered) and is further aged in bottle for at least 10 months.

pH: 3.60

Total acidity: 5.91 g/lt

Residual sugar: 0.4g/lt

 

Ageing Potential: 10-15 years

Tasting Notes: A complex wine with a deep purple colour. A rich bouquet of ripe fruits such as strawberry, plums and blackberries with notes of vanilla, tobacco, cedar, black chocolate and sweet spices. In the mouth, velvety tannins well balanced by good acidity and a long fruity finish.

Food Pairing: Serve with red meats, game and ripe yellow cheeses. Serve at 18-20οC
