SOIL TYPE
Chalky clay, semi-mountainous, at 350 meters altitude.
Age-plant formation: 12-25 years-old vines trained to bilateral cordon trellis system.
Harvest period: 2nd fortnight of September.
WINEMAKING
Classic red vinification with a short maceration period of 5-6 days and aging for 8-10 months in oak barrels.
TASTING NOTES
Strong aromas of red fruits and nuts with a touch of vanilla on the finish. Dry, soft, and velvety flavor. Ready to drink it young, but can also be cellared for 3 to 5 years
FOOD PAIRING
Meat dishes with light red sauces, white meats (e.g., chicken with hilopites), giouvetsi with eggplant purée, octopus cooked in vinegar.
